Apple crisp

“I have a couple friends who enjoy baking as much as I do, and many times throughout the week we'll text each other a great new recipe we came across, or a photo of a mouthwatering dessert. Sometimes, if I’m lucky, one of them will save a slice of pie or a couple cookies for me.

Last week, one of these such friends went apple picking with her family on a nearby farm, here in Upstate New York. They drove away with so many apples, she gifted a few pecks to friends… and I was fortunate to be one of the recipients.”

Ingredients

  • 6 Golden Delicious apples, peeled and cubed

  • 2 Tbsp granulated sugar

  • 3 tsp ground cinnamon

  • 2 tsp fresh lemon juice

  • 1 cup light brown sugar

  • 3/4 cup old fashioned oats

  • 3/4 cup all purpose flour

  • 8 Tbsp (1 stick) cold unsalted butter, diced into small cubes

  • pinch of salt

  • Butter for greasing baking dish

Method

  1. Preheat oven to 350 degrees F. Grease a 9 x 13 inch glass or ceramic baking dish with butter or cooking spray if you prefer.

  2. In a large bowl, toss the apples with the granulated sugar, 2 tsp of cinnamon, and lemon juice.

  3. Make the topping: In a medium bowl, whisk together the brown sugar, flour, oats, 1 tsp of cinnamon, and salt. Cut the cold butter into the mixture and use a pastry cutter or two forks to incorporate.

  4. Layer the apples in the prepared baking dish and sprinkle the topping over the top of the apples. Smooth the topping into an even layer. Bake until the top is golden brown, 40 to 50 minutes. Serve warm.
