Ingredients

  • 1 Whole pasture raised chicken

  • 10 Cloves of garlic: 5 minces & 5 whole

  • 1 tbsp chopped fresh thyme, plus one sprig

  • 1 tbsp chopped fresh rosemary, plus one sprig

  • 1 tbsp chopped fresh basil, plus 2 leaves

  • 1 tbsp butter

  • 2 tsp salt

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp paprika

  • 1/2 tsp black pepper

  • 1 tbsp lemon zest

  • 1 large yellow onion (halved)

  • 1 lemon (halved)

  • 2 tbsp balsamic vinegar

Method

  1. Preheat oven to 200 degrees F.

  2. In a small bowl create a paste by mixing together the minced garlic, chopped herbs, butter, seasonings and lemon zest.

  3. Place the chicken in a large dutch oven or heavy pot. Rub the paste all over the chicken making sure to get underneath the skin. In the cavity place half the onion, half the lemon, 2 cloves of garlic, the sprigs of thyme and rosemary and 2 basil leaves. Put the remaining onion and garlic around the chicken in the pot and drizzle the chicken with the balsamic vinegar.

  4. Cover the pot and place in the oven and roast for 9 1/2 hours.

  5. Uncover the pot, raise the oven heat to 425 degrees and roast the chicken until the skin crisps, about 10 minutes.
